Chicken with Pineapple Chile Sauce
We've been enjoying fresh pineapple lately. We've added it to our morning combo of fruits and yogurt so we always have it on hand. So we decided to make a spicy pineapple sauce to go with the chicken. 

As always, we marinated the chicken overnight so it was really juicy and flavorful. The pineapple is the star of the show as it is super tasty. We added some herbs and a serrano chile. It was yummy! We like to cook a whole chicken so we can get creative with LO chicken for another dinner or two.

PREP TIME:   30 minutes
COOK TIME:  50 minutes

INGREDIENTS:
For the marinade:
1/4 cup frozen orange juice
1/4 cup water
1/4 teaspoon red pepper flakes
1 teaspoon coriander
1 teaspoon cumin
Fresh ground black pepper
For the chicken:
4 slices of fresh pineapple
1 serrano chile, diced
2 cloves of garlic, sliced thin
1.5 tablespoons paprika
2 tablespoons brown sugar
1 slice of pineapple for the sauce
1 tablespoon apple cider vinegar

PREPARATION:
1. Prepare marinade ingredients and place in a 2 gallon plastic freezer zip lock bag. Cut the chicken in half, lengthwise and add the chicken to the marinade and place in the refrigerator overnight.
2. Preheat oven to 400*F, place marinated chicken in a baking pan with the 3 pineapple slices under the chicken. Roast for about 50 minutes until the meat thermometer registers 165*F. 
3. While the chicken is cooking, add the chile, garlic, paprika, brown sugar, pineapple slice and apple cider vinegar to a blender and blend until smooth.
4. Place this mixture in a pot and bring to a boil. Simmer for about 10-15 minutes.
5. When the chicken is done, brush the sauce onto the chicken and roast for about 2-3 minutes. Put remaining sauce in a gravy boat and serve with the chicken.
6. Remove chicken from the oven and let rest for a few minutes then cut the pieces up and serve with a pineapple slice and your choice of side dish.

PLATING:
Serve chicken on a heated plate with a pineapple slice, extra sauce and your choice of vegetable. Anything with a slightly sweet flavor would be a good choice. The lightly cooked peas were delicious.
