Delicious Quick n Easy Fire Roasted Corn
This simple technique of fire roasting corn or peppers was taught to us by an old friend from Mexico. She mainly used it to roast pasilla peppers and remove their skin when cooking Chiles Rellenos.
It is a quick, clean way to fire roast corn indoors when the weather is unfit for grilling or you just want to cook one or two ears. Simply shuck and remove the tassel fibres from the corn, stick on a metal skewer lengthwise.
Turn the burner to high and slowly rotate and move the corn back and forth across the burner being careful not to burn it or yourself. Concentrate on unbrowned areas until it has all reached the desired doneness then eat slathered with butter or plain...whatever way you like it.
