DIY baked broccoli florets and cheese

Broccoli is a must have veggie in our house. We love it. But, it was time to do something different other than slathering it with mayo and cayenne pepper. So we went online to get some ideas and these broccoli cheese puff images kept popping up. So, even though it was a hot day, I cranked the oven up to 400 degrees and prepared the ingredients for baking. It's probably the last baking project till spring. LOL!

They were delicious but the house got pretty warm for awhile. Here's the recipe that I modified from a collection of other people's recipes. I added more spice, changed some quantities and found they wouldn't stick together without two eggs.

Prep time:           45 minutes
Cooking Time:    20-22 minutes

INGREDIENTS:
12 ounces broccoli florets, chopped fairly fine
2 eggs
2 green onions
1 C extra sharp cheddar cheese (or milder if you prefer)
1/2 C Panko bread crumbs
2 pinches of red pepper flakes
2 large cloves of garlic, finely chopped
1/2 t salt
1/2 t fresh ground black pepper
Sriracha chili sauce for dipping
Parmesan cheese for sprinkling on top
Smoky paprika for sprinkling on top

PREPARATION:
1. Microwave the broccoli florets for 1 minute. Then submerge in ice water to stop the cooking process. Drain thoroughly and dry with a paper towel to remove moisture. Finely chop.
2. Preheat oven to 400 degrees.
In a medium sized bowl, combine eggs, green onions, cheddar, Panko, red pepper flakes, garlic, salt and pepper.
3. Mix well then add the broccoli bits. Scoop out a heaping tablespoon and form a round log in your hand, squeezing the mixture together. (This is what I tried to do with one egg but it wouldn't stick together.)
4. Place on a parchment lined cookie sheet. Since I was experimenting, I also used a mini muffin tin for 12 of them. We preferred the free form which were a bit larger but you can cook them either way.
broccoli cheese dudes ready to cook5. After forming the shape you want, sprinkle with Parmesan cheese then with smoky paprika.
6. Bake in the oven for 20-22 minutes until slightly brown and crispy on the bottom. 
Serve with sriracha dipping sauce if you like the extra spice.

PLATING:

These can be a side dish or appetizer. They're great for parties too!
