DIY KILLER SAUSAGE and KRAUT on a BUN...

Today we're taking a little trip down memory lane. Memories of last summer, spring and fall when we could grill anytime we chose. This is a down and dirty, quick and easy meal that's loaded with flavor. Stoke up the fire and dinner's ready in minutes!

We love all kinds of sausages and buy them from our local co-op where they make their own. They're always delicious and made with great organic ingredients. It's our pretend Whole Foods Market since we live in a rural community.

We're lucky we have so many organic choices available. So, take your pick as to the kind of sausage and the bun as well. Just make sure you add the onions, sauerkraut, celery seed, Thousand Island dressing and cheese. There's lots of flavor packed in with those ingredients. And happy Grillin'!

INGREDIENTS:

Sausage of your choice (we chose andouille this time)
Bun of your choice (we like the cheddar/jalapeno buns)
Sauerkraut
Celery seed
Red onion, sliced thin
Cheddar cheese
Thousand Island dressing

HOW TO MAKE IT:

1. Lightly toast the buns and reserve in a warming oven. (you can do this on the grill as well)
2. Heat up the grill and cook the sausages and cook until nicely charred. Reserve in warm oven.
3. Start sauteing the red onions, add the sauerkraut and celery seed and saute until all are lightly browned. Remove from heat.
4. Slather Thousand Island dressing on both sides of the bun and place the sausage in the middle. Melt the cheese onto the sausage then add the onions and sauerkraut mixture.

Serve with potato or pasta salad. Grab 'dog with both hands and take a bite out of that delicious flavor and texture medley. Wow! Can't beat the simple pleasures in life.

Bon appetit,

Tom and Anita
