DIY Shiitake Mushroom Sauce over Lemon Fettuccini Pasta

A vegetarian meal that's packed full of flavor! If you're a mushroom lover, this sauce is earthy and yet delicate with a touch of spiciness. Of course, what could be bad about mushrooms with garlic, lemon and Parmesan cheese! All great, fresh, organic ingredients. It's a quick and easy dinner to put together with not much prep and lots of taste.

SERVES:         2
PREP TIME:  10 minutes
COOK TIME: 15 minutes


INGREDIENTS:
3 tablespoons butter
1 tablespoon olive oil
1 teaspoon black truffle oil
6 ounces shiitake mushrooms
4 green onions, sliced in 1/4" rounds, including the greens
8 medium cloves garlic, sliced thin
4 tablespoons fresh parsley, rough chopped
Juice from 1 medium sized lemon
Zest from 1 lemon
Pinch of red pepper flakes
Fresh ground black pepper
6-8 ounces lemon fettuccini
Fresh grated Parmesan cheese

PREPARATION:
1. Melt the butter in a large saute pan. Add the olive oil and black truffle oil.
2. When pan is hot, add the green onions. Saute until softened then add the mushrooms and garlic. Add the red pepper flakes, pepper, lemon juice and lemon zest. Cover the pan and simmer for about 10 minutes, stirring occasionally. Then add the parsley.
3. Meanwhile, cook the pasta for about 10 minutes. Drain the pasta then add it to the saute pan and mix it with the sauce until completely integrated. Serve immediately with fresh grated Parmesan.

PLATING:
Place the pasta on warmed dinner plates placing the mushrooms on top. Sprinkle with the shaved Parmesan cheese at the table.
