cDIY Tuscan Beef Stew with Fennel
We went to our local grocery store and asked our butcher about buying short ribs. We live in a fairly rural community and we're really lucky to have a grocery store that carries a lot of organic products. However, our butcher informed us that he didn't carry short ribs any more because they didn't sell very well. He convinced us that buying a chuck roast would give us the same flavor as the short ribs. So we decided to do a comparison and bought the chuck roast, cut it into short rib sized chunks and whipped up this tasty dish. 

It was super delish, and one of the best beef stews we ever have eaten; but it was not the same as short ribs. So, we're calling it a Tuscan beef stew; which is exactly what it was. Short ribs have a unique flavor and texture that is just different than chuck roast, even though they are basically the same meat. Point, set, match.

SERVES:            4
PREP TIME:     15 minutes
COOK TIME:      4 hours

INGREDIENTS:
2.5 pounds choice chuck roast
3 tablespoons olive oil
1 bunch organic carrots, cut in 1/2" slices
1 large yellow onion, diced
1 large fennel, sliced and cut in half
1 bundle fresh thyme bundle
4 cloves of garlic, sliced thin
2 teaspoon smoky paprika
2 teaspoons coriander
1 teaspoon anchovy paste
1/2 cup red wine
28 ounce can of whole San Marzano tomatoes with juice, hand crushed
1/2 cup beef broth
1 bunch fresh basil, chopped
Pinch of red pepper flakes
Fresh ground black pepper
6-8 ounces tagliatelle or your favorite pasta

PREPARATION:
1. Cut up the meat into about 2" chunks. Brown on all sides in olive oil. We do this in our slow cooker insert pan as it can go from the stove top to the slow cooker.
2. Add the remaining ingredients and cook on high for 4 hours.
3. The last 20 minutes cook the pasta according to directions on the package. We like imported Italian tagliatelle for this dish as it has more substance to complement the meat and vegetables. Rinse and drain the pasta well.

PLATING: 
Place the pasta on a warmed dish and spoon the meat and veggies over the pasta.
