DIY Chicken and Fresh Fig Stir Fry

We're still enjoying this year's fig season, just can't seem to get enough of them! It was too hot to barbecue so we opted for a quick stir fry. You all know how much we like the spicy ingredients so we spiced this one up with Sriracha! That and a few other ingredients and we turned out a really complex combination of flavors. As usual, we served it over Jasmine rice. A very delicious dinner in 30 minutes! It's hard to beat that, isn't it!

SERVES:            2
PREP TIME:     15 minutes
COOK TIME:    15 minutes

INGREDIENTS:
For the sauce:
4 tablespoons honey
1 heaping teaspoon garlic, minced
1 teaspoon fresh ginger, minced
1 teaspoon Sriracha
2 tablespoons soy sauce or tamari
Juice of 1/2 lime
Zest of 1 lime
1 hand full of mint leaves

For the stir fry:
1 boneless, skinless chicken breast, cut into bite sized pieces
4 green Adriatic figs, quartered (or your favorite fig)
1 green jalapeno, chopped small
2 red jalapenos, chopped small
3 green onions, cut in 1" pieces
1 orange mini pepper, cut in rounds
Dash of red pepper flakes
2-3 tablespoons dark sesame oil

PREPARATION:
1. Cut up the chicken and all the other ingredients and set aside.
2. Heat wok, add the sesame oil and when oil is hot, add the chicken pieces. Cook til done and reserve in warm oven.
3. Meanwhile, cook the rice on medium heat for 15 minutes until done.
4. Add the green onions and peppers to the hot wok and add the sauce ingredients without the mint. Stir fry for a few minutes until almost done. Then add the cooked chicken and figs and cook for another few minutes. Add the mint right before serving.

PLATING:
1. Place a couple of scoops of rice on a warm bowl or plate.
2. Add the stir fry ingredients to the top of the rice. 
3. Garnish with some mint leaves.
