DIY Mediterranean Style Slow Cooked Short Ribs

It's winter and time for comfort food. One of our favorites is short ribs. We've previously published several short rib recipes but we're always creating new ingredient combinations for different flavors. We love Mediterranean cooking and especially all the wonderful spices. So we decided to make these Mediterranean style.

As always, we used as many organic ingredients as possible and made it as healthy as we can. It turned out very tasty with a thick rich sauce! But the figs, olives and garbanzos were so good that we decided next time we'd add more of those and leave out the potatoes. But it's all individual tastes; so...if you like Mediterranean flavors, try this at home; it's DIY!

SERVES:           4
PREP TIME:    10 minutes plus overnight marinating
COOK TIME:     6 hours on high in the slow cooker

INGREDIENTS:
For the marinade:
3 pounds bone in short ribs
2 tablespoons brown sugar
1 tablespoon turmeric
2 teaspoons ginger
2 tablespoons paprika
1.5 teaspoons cinnamon
1/2 teaspoon cardamom
1/2 teaspoon salt
fresh ground black pepper
1/2 teaspoon cayenne pepper
2 teaspoon apple balsamic vinegar (may substitute any fruit flavored balsamic)
1 tablespoon chicken broth
1/3 cup olive oil
2 teaspoons fresh ginger, minced
4 cloves garlic, minced
In the slow cooker:
Add the marinated ribs with the juice and spices plus
2 cups chicken broth
1 14.5 ounce can of chopped tomatoes with juice
1 15 ounce can of garbanzo beans
1 heaping tablespoon tomato paste
15 dried figs, cut into quarters
1 cup Castelvetrano Italian olives, seeded
8-10 fingerling potatoes (optional)

Serve over quinoa, rice or pasta noodles.

PREPARATION:
1. Combine all the marinade ingredients and pour in a 2 gallon bag. Add the short ribs and marinate overnight.
2. Add the ribs and marinade ingredients to the slow cooker. Add remaining ingredients and put your slow cooker on high for 8 hours. When done, remove as much fat as possible from the surface of the sauce.
3. In the last 20 minutes, prepare the quinoa according to package directions.

PLATING:
Place the quinoa, rice or noodles on a pre-warmed  plate, place the ribs and other ingredients on top, add the sauce you want and serve piping hot for a taste sensation.
