DIY Pumpkin Cookies with Raisins and Chocolate Chips

We are total cookie monsters...just about all cookies are good but some are great! This recipe falls into the great category. The pumpkin is not overwhelming and the spices add a huge amount of flavor. Plus it makes a large batch of cookies for more eating pleasure! I've made quite a few pumpkin pies this winter so it was time for a change in texture. These cookies were a huge success! We both scarfed up a handful of them right off the bat.

Tom gives them a 10+ on the flavor scale!

MAKES:           77 cookies
PREP TIME:    15 minutes
COOK TIME:   15 minutes per batch, 4 batches = 1 hour

INGREDIENTS:
1 cup walnut oil
3/4 cup white sugar
1 cup brown sugar; a little more if you like them really sweet
2 large eggs (organic if you can)
1 teaspoon vanilla
1 cup canned pumpkin (organic if you can)
3 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
12 ounce bag of semisweet chocolate chips
1 cup organic raisins

PREPARATION:
1. Preheat oven to 350*F and line cookie sheet with parchment paper.
2. Add walnut oil and sugars to a mixing bowl and combine.
3. Add the eggs, one at a time and mix til creamy.
4. Add the vanilla and pumpkin and mix to combine.
5. In a large bowl, mix the flour, baking soda, salt and spices and stir with a whisk.
6. Add the flour mixture to the pumpkin mixture about a cup at a time. Add the chocolate chips and the raisins. Mix to combine.
7. Using a tablespoon, portion out the cookie dough onto your parchment lined cookie sheet. These cookies spread out so don't put the dough too close together. I used 5 cookies lengthwise and 4 cookies crosswise. That's 20 per batch. Bake for 15 minutes until slightly brown around the edges. Don't overcook! 
8. Remove from oven, let them set for a couple of minutes then move to a wire rack. When the next batch is cooking and the previous batch has cooled you can remove the cookies to a plate to make room on the wire rack for the next batch.
