DIY Roasted Garlic / Parmesan Cauliflower
When I was little, my mother always served cauliflower boiled and with cheese sauce. It was delicious and for most of my life, I thought that was the only way to eat it. But with the advent of cooking shows and food blogs, I realized that this under-rated vegetable had more to offer. Here it is roasted with crushed garlic, Parmesan cheese and fresh ground black pepper. None of the water soluble vitamins and minerals are lost and the flavor is delicious. But this is just one of many ways to cook cauliflower and hopefully we'll cover more later. In any event, try this and appreciate this delightful vegetable.
Serves: 2
Prep Time: 10 minutes
Cook Time: 25 minutes
INGREDIENTS:
1 small head cauliflower, cut into small florettes
2 T crushed garlic
3 T olive oil
1/2 C fresh grated Parmesan cheese
1 T chives, chopped fine
fresh ground black pepper
PREPARATION:
1. Preheat oven to 400*. Lightly oil a 10" square roasting pan.
2. Place all ingredients except the Parmesan cheese and chives in the pan and toss to coat.
3. Bake for 20 minutes and stir halfway through. Sprinkle the Parmesan cheese and chives on top and place under the broiler until golden brown. (about 4-5 minutes)
PLATING:
Serve with an entree of your choice on a heated plate. Here we have served it as a side dish to roast pork with a cherry/wine reduction sauce. The preparationj of the pork and sauce was posted Here.
