DIY White Chocolate Chip Cookies

Call us cookie monsters cuz we love cookies! Have you ever heard the expression, "I never met a cookie I didn't like." That would be us....of course, we like some better than others but they're almost all good!

I wanted to bake some cookies for a friend getting ready to have an operation and asked what kind of cookie was his favorite. He said white chocolate chip cookies. So that's what I made. Mmmm! They're delicious! This makes a big batch of cookies so I put a few away for Tom. He loved them! (I confess I ate a couple myself, couldn't resist!)

SERVES:              68 medium sized cookies
PREP TIME:         20 minutes
COOK TIME:        13 minutes (I made 3 batches, 1 at a time)

INGREDIENTS: 
3/4 cup walnut oil
2 eggs
1/2 cup white granulated sugar
1 cup brown sugar
3 cups all purpose flour
1 teaspoon vanilla
1 teaspoon salt
1/2 teaspoon baking soda
9 ounces of white chocolate chips

PREPARATION:
1. Preheat oven to 350*
2. In an electric mixer, combine the walnut oil and eggs until smooth.
3. Add the white sugar then the brown sugar
4. Slowly add the flour while continuing to mix 
5. Add the vanilla, salt and baking soda. Mix thoroughly then add the white chocolate chips.
6. Scoop out about a tablespoon of mixture and flatten a bit and place on a cookie sheet prepared with cooking spray. I made 3 cookie sheets, 1 at a time. These cookies do not spread much (they rise) so you can put them fairly close together. 
7. When the cookies are done remove from oven and immediately place on a wire rack to cool. Put the next batch in the oven and repeat the procedure.

PLATING:
No plating required for cookies, just dive right in and taste a few! Really good with a cool glass of milk!
