Gingerbread Christmas Cookies

My last visit with our grandson and family produced these gingerbread cookies. Simon and I like to have a cooking project and it usually produces something sweet. This time daughter, Melissa, joined in on the decorating part. We had lots of fun and the cookies turned out delicious. I always like to add a bit more spice than most recipes so get your taste buds set for a cookie bursting with flavor.

The number of cookies will vary on this recipe because of the different sizes of the cookie cutters.
Prep Time:        20 minutes
Cook Time:       8-10 minutes

INGREDIENTS:
1/2 C butter
1/2 C sugar
1/2 C molasses
1 egg yolk
2 C flour
1/2 t salt
1/2 t baking soda
1/2 t baking powder
1 t (slightly heaping) ground cloves
1 t (slightly heaping) ginger
1/2 t (slightly heaping) cinnamon
1/2 t (slightly heaping) nutmeg

PREPARATION:
1. Cream the butter and sugar together in a large bowl until smooth.
2. Stir in the molasses and egg yolk.
3. In a separate bowl, combine the flour, salt, baking soda, baking powder and all the spices. Add to the previous mixture and blend until it's smooth. Cover and chill for at least an hour.
4. Preheat oven to 350 degrees F. Remove the dough and knead with your hands until smooth. Lightly flour a wooden board and roll out the dough to about 1/4 inch thickness. Then cut into the shapes you like with cookie cutters. We used two sizes of gingerbread men, an angel, a star and a Christmas tree.
5. Place on an ungreased cookie sheet and bake for 8-10 minutes until firm. Remove from oven and place on a wire rack to cool. When cooled the most fun part begins. Select any decoration you like to use and let your imagination have a good time. We used Christmas sprinkles, edible eyes, peppermint sticks and  white Candy Melt.
