Anita bought a beautiful pineapple at the local market. It was perfectly ripe and I skinned and sliced it in about 5 minutes and we dove in. It is a large one and we're eating it for breakfast, lunch, dinner and in between. So there may be pineapple posts for awhile. All kidding aside, pineapple makes a great addition to a salad or breakfast fruit and grilling it lightly brings out more complexity in it's flavor.
Today's idea was a grilled pineapple burger served with honey mustard on an Asiago cheese Kaiser roll. These rolls are baked locally and they're delicious. I added a slice of yellow onion which we grilled like the pineapple. The combination of grilled hamburger, grilled pineapple and grilled onion was delicious with the honey mustard, and Anita assured me that it was just as good without the onion; but we guys know better ;-)>
Anyway, we won't trouble you with a recipe on this one; but I will say that you want to dry the outside of the pineapple slices, squeeze out a little of the juice and grill them until you get distinct grill marks for maximum flavor.
