DIY Fennel Crusted Fried Pork Burrito with Fennel Salsa Verde
We bought a beautiful pork tenderloin that was more than enough for two dinners and got talking about how to make another tasty dish that had a different taste. We found an interesting recipe from Bon Appetit that involved fennel. We then bantered some ideas around and decided upon an open ended burrito.
Of course, as always, we had to make the recipe our own so we added a bit more flavor and new ingredients and came out with a super tasty open ended burrito! The flavors were delicious and so fresh tasting. Hope you'll like it!

PREP TIME: 15 minutes
COOK TIME: 8-10 minutes
INGREDIENTS:
For the fennel salsa:
1/2 small fennel, chopped small
2 tablespoons fennel fronds, chopped
1 medium sized green onion sliced in 1/4" slices including the green stalk
2 large garlic cloves, chopped fine
2 tablespoons small capers
1/2 cup cherry tomatoes, quartered
2 tablespoons fresh parsley, chopped
zest from 1 lemon
juice from 1/2 lemon
1/2 cup olive oil
Salt
Fresh ground black pepper
For the pork:
3/4 pound pork tenderloin, sliced 1/4" thick
1 tablespoon fennel seed, ground
1 teaspoon coriander, ground
For the burrito:
2 tortillas
Grated cheddar cheese
1 avocado
PREPARATION:
1. Mix all of the ingredients for the salsa and thoroughly mix together. This is better if made earlier for the flavors to blend together. Refrigerate. Remove from the fridge and let it set out at room temperature for about 30 minutes.
2. Wrap tortillas in aluminum foil and place in a warming oven with 2 plates.
3. Grind the seeds in a food grinder. Place the pork in a small bowl and pour the ground fennel and coriander mixture over the pork. Mix thoroughly. If you have the time, let that set for about 30 minutes for the mixture to soak into the meat.
4. Saute the pork in olive oil in a hot skillet for about 4 minutes per side then cut the slices in half. Set aside. Cut the avocado into slices and grate the cheese.
5. Remove the tortillas and plates from the warming oven. Place one tortilla on a plate, put a strip of salsa across the center of the tortilla, add several pieces of pork, sprinkle with cheddar cheese. Before folding the tortilla, place under the broiler to melt the cheese. When the cheese has melted, remove from broiler and fold the tortilla and secure it with a toothpick.
PLATING:
1. Now that the tortilla is folded, spoon salsa over the tortilla and top with sliced avocado.
2. Repeat process with the next tortilla. Serve immediately!
