Pork Tenderloin and Orzo with Parmesan and Peas
Let's hear it for pork. It's tender and juicy and lends itself to so many flavors. We love it and have cooked it in so many different ways, with and without sauces. It's always delicious. This recipe was inspired by Whisking Mama. She cooked hers in a crock pot but we chose to cook ours in an All-Clad pot. The sauce is awesome. It takes about 20 minutes to cook as opposed to 5.5 hours in the crock pot. Plus, we like to brown the meat on all sides before adding the sauce as that adds another level of flavor. The orzo with Parmesan and peas is a great side dish too. Hope you'll give it a try for an elegant, easy meal to prepare.

SERVES:         2
PREP TIME:    10 minutes
COOK TIME:    20 minutes

INGREDIENTS:
For the pork:
1 pound pork tenderloin
1/3 cup low sodium soy sauce
2.5 tablespoons yellow mustard
3 tablespoons olive oil
4.5 tablespoons maple syrup
1 large shallot, minced
1.5 teaspoon onion powder
2.5 teaspoons granulated garlic

For the orzo:
3/4 cup orzo
Splash of olive oil
1/2 yellow onion
3 cloves garlic, minced
2 cups chicken broth
1 cup frozen peas, thawed
1/2 cup fresh grated Parmesan cheese

PREPARATION:
For the pork:
1. In a stainless steel or cast iron pot, add a splash of olive oil and, when the pot is hot, add the pork, browning on all sides.
2. Meanwhile, combine all the sauce ingredients and whisk together to blend.
3. When the meat is browned, add the sauce, lower the heat, cover and cook for 15 minutes.

For the orzo:
1. The pork and the orzo take about the same amount of time but start the orzo process first then start the pork. First, add a splash of olive oil to the pan and when the oil is hot, add the onion. Cook until onion is translucent then add the orzo. When the orzo is tan, add the garlic and the chicken broth.
2. Simmer for 15 minutes until the moisture is absorbed. Stir often so the orzo doesn't stick to the bottom of the pan. 
3. Remove from heat and add the room temperature peas and the Parmesan cheese and mix thoroughly. 

PLATING:
1. Slice the pork in 1/2" slices and arrange on the warmed plate. Place the sauce in a strip in the center of the pork.
2. Add the orzo with peas on the side.
