DIY Baked Chicken Parmesan over Angel Hair
We're revisiting chicken Parmesan only this time we decided we'd bake it in the oven as opposed to sauteing it in a pan. It was super delicious and very warming on a cold, rainy spring evening. Not that I'm complaining about the rain (it's been storming for over a week with more to come) because California needs the rain desperately. My mind is going to the Caribbean or Mexico or Hawaii where I'm visualizing the warm sunshine and beautiful beaches...hahaha!

Anyway, back to dinner...it's a really delicious dish you can quickly and easily put together whether you saute it or bake it. FYI, it's quicker to saute it if you're trying to save time. So here's the recipe.

SERVES:                 2
PREP TIME:            5 minutes
COOK TIME:         27 minutes

INGREDIENTS:

1 large boneless, skinless chicken breast, pounded to 1/4" and cut into two pieces
1 1/2 cups Panko bread crumbs
3 tablespoons fresh grated parmesan cheese
1 egg
1 teaspoon granulated garlic
fresh ground black pepper
Fresh grated mozzarella cheese
8 oz marinara sauce
Fresh grated Parmesan cheese
8 ounces of your favorite pasta (we used angel hair)
Italian parsley for garnish

PREPARATION:

1. Place bread crumbs, Parmesan cheese, granulated garlic and pepper on a plate. Mix together.
2. Whip the egg in a medium sized bowl large enough to dip the chicken.
3. Place the chicken breast between wax paper or plastic and pound to 1/4" thickness as evenly as possible. Cut in half or quarters.
4. Dredge the breast in the egg then in the bread crumb mixture. Make sure to get a nice even coating on. 
5. Preheat the oven to 400*F. Place the chicken in a pan with sides on it and cook for 20 minutes then flip to other side. After flipping the chicken, cook for 5 minutes. Place the oven on broil and add enough of the heated marinara sauce to cover the piece then add the grated cheese to the chicken and broil until the cheese melts, about 2 minutes.
6. Before cooking the chicken get your pasta water ready and cook whatever pasta you desire according to the directions on the package. Also heat the marinara sauce before adding it to the chicken.


PLATING:

1. Place the pasta on a heated plate. Spoon the remaining sauce over the pasta. Set the chicken with the sauce and melted cheese on top of the sauce. 
2. Garnish with chopped Italian parsley and fresh grated Parmesan cheese.
