DIY Chicken Parmesan with Puttanesca Sauce on Tagliatelle Pasta

Sometimes we like to cook a meal that's just down home, quick and easy but packed full of flavor. Chicken parmesan is on of those meals. It's so easy but mouthwateringly delicious! We had a jar of puttanesca sauce in the fridge so that became our inspiration for the dish.

We also bought some excellent Italian pasta at our local Back Porch Market where we buy our cheese and chorizo along with other goodies. We cut a few springs of fresh chives from the garden to garnish. A yummy meal in about 15 minutes. 

SERVES:               2

PREP TIME:          5 minutes
COOK TIME:         10 minutes

INGREDIENTS:

1 boneless, skinless chicken breast, pounded to 1/4" and cut into two pieces
1 1/2 cups Panko bread crumbs
3 tablespoons fresh grated parmesan cheese
1 egg
2 tablespoons chives plus extra for garnish
1 teaspoon granulated garlic
fresh ground black pepper
2 slices of your favorite Italian cheese (we actually used Danish Havarti which was delicious)
8 oz puttanesca sauce
Fresh grated parmesan cheese
8 ounces of your favorite pasta (we used Italian tagliatelle)

PREPARATION:

1. Place bread crumbs, parmesan cheese, granulated garlic, pepper and chives on a plate. Mix together.
2. Whip the egg in a medium sized bowl large enough to dip the chicken.
3. Place the chicken breast between wax paper or plastic and pound to 1/4" thickness as evenly as possible. Cut in half or quarters.
4. Dredge the breast in the egg then in the bread crumb mixture. Make sure to get a nice even coating on. This should be done at least one hour before cooking so the mixture will have time to adhere to the chicken and not just flake off when you're cooking it. Cover and place in the refrigerator.
5. When you're ready to cook, remove the chicken from the fridge and heat some olive oil in a saute pan. When the oil is hot, add the chicken and cook about 5 minutes per side. After flipping the chicken add the cheese to the cooked side for it to melt onto the chicken.
6. Before cooking the chicken get your pasta water ready and cook whatever pasta you desire according to the directions on the package.
7. While the pasta is cooking heat the puttanesca sauce and chop the chives for garnish.

PLATING:

1. Place the pasta on a heated plate. Spoon the sauce over the pasta. Set the chicken with the melted cheese on top of the sauce. 
2. Garnish with chopped chives and fresh grated parmesan cheese.
