DIY Roasted Cauliflower and Spicy Balsamic Chicken

We haven't made cauliflower in many moons and I'm not sure why. It's delicious! Specially when you add lots of seasoning and Parmesan cheese. It really soaks up the flavors. You just cut up the florettes, add the seasoning, give it a toss and pop it in the oven at 450*F for 25 minutes. This is a simple meal that is packed with flavor!

SERVES:          2
PREP TIME:     10 minutes
COOK TIME:    25 minutes

INGREDIENTS:
For the cauliflower:
1 head of cauliflower, separated into florettes
2 teaspoons Italian herb blend
3 extra large cloves of garlic
5 tablespoons of olive oil
1/3 cup of fresh grated Parmesan cheese
salt and fresh ground black pepper to taste

PREPARATION:
1. Preheat the oven to 450*F and grease a large casserole dish.
2. Place cauliflower florettes in a 2 gallon plastic zip lock bag and add the olive oil, herb blend, garlic, salt and pepper. Toss to coat. Then add the mixture to the casserole dish.
3. Stir at the halfway point (12-13 minutes) At the end of 25 minutes add the Parmesan cheese and broil until it turns a golden brown (2-4 minutes)

For the chicken:
INGREDIENTS:
2 chicken thighs with bone and skin
1/4 cup balsamic vinegar
1 tablespoon sriracha

PREPARATION:
Mix the balsamic and sriracha together and brush onto the chicken. Bake at 350 for 25-30 minutes until done. 

PLATING:
Place chicken on a heated plate and add cauliflower on the side. Garnish cauliflower with parsley if desired.
