DIY Slow Cooker Beef Stew

It's fall and now that we have this nice, new slow cooker we have the urge to cook some comfort food. Of course, beef stew came to mind. When we went to our local market the stew meat looked really good and lean. So, we bought a couple of pounds and then made up a recipe to cook in the slow cooker. 

Since we both love carrots, potatoes and onions that's exactly what we put into the stew. We added garlic, fresh herbs (we're lucky enough to have fresh thyme and rosemary growing so we can just go outside and clip some) and a can of whole San Marzano tomatoes. We enjoyed a wonderful, warming dinner as the sun went down and the possibility of rain was in the forecast. It was perfect!

COOK TIME:         8 hours plus 15 minutes to brown beef
Ingredients for a DIY Slow Cooker Beef Stew

INGREDIENTS:
For the marinade:

1/3 cup olive oil 
4-5 cloves of garlic, sliced
1 tablespoon Italian seasoning

For the stew:
 2 pounds stew meat, cut into  one inch chunks
1 large yellow or white onion, cut in eighths
1 bunch of baby carrots, cut in half
1 pound small potatoes
2 jalapenos, cut in rounds
5-6 garlic cloves, left whole after skinning
1 28 ounce can San Marzano whole tomatoes with juice
1 tablespoon Worcestershire sauce
1 1/2 tablespoons tomato paste
1 bundle of fresh thyme stalks
1 bundle of fresh rosemary stalks

PREPARATION:
1. Prepare marinade and pour over stew meat and mix to combine. You can do this in a seal-able plastic bag or a bowl. Cover and put in the refrigerator overnight.
2. Remove meat from the marinade and get it as dry as possible. Brown the meat then start the stew going. Add all the remaining ingredients to the slow cooker and cook it on low heat for 8 hours.  Note that if the beef is too moist, it will not achieve a good brown.


PLATING:
Beef stew can be served in a bowl or on a plate. If properly prepared, it can be eaten with spoon or a knife and fork. I tend toward the bowl and Anita prefers a plate. In any event, heat the serving dish so the stew remains hot while eating. Enjoy the delicious flavors and comfort of this dish.
