Yams with Sour Cream Curry Sauce
Yams are delicious no matter how you cook them! We love them just plain baked or with added seasoning. This time we tossed the wedges with ginger, curry powder and olive oil. I thought we were being very original so, just for the fun of it, I searched the internet for a sour cream curry sauce recipe. What a disappointment when I saw how many other people had thought of the same idea. Anyway, we put together this recipe ourselves and it turned out super delicious! However, we have cooked potato wedges many times and all recipes say they are crispy but ours never turn out crispy. They were really tasty, but not crispy. Here's how we made this side dish. It's really easy and quick to put together.

SERVES:             2
PREP TIME:        10 minutes
COOK TIME:       30 minutes

INGREDIENTS:
For the yams:
2 medium sized yams, cut in wedges
1/4 cup olive oil
1 teaspoon curry powder
1/4 teaspoon dried ginger

For the sour cream curry sauce:
1/2 cup organic sour cream
1/8 teaspoon dried ginger
1/8 teaspoon cumin
1 teaspoon curry powder
Pinch of red pepper flakes

PREPARATION:
1. Cut the yams into wedges, place in a plastic bag.
2. Mix the olive oil, curry powder and ginger in a small bowl then add to the bag of yam wedges. Toss to coat all pieces.
3. Place in a preheated 400* oven for 30 minutes, turning after 15 minutes.
4. While the yams are baking, mix all of the ingredients for the sauce. Place in a small bowl for dipping.

PLATING:
Arrange the yams on a warmed plate and serve with your favorite meat. We chose pork chops.
