How to Make Chicken Curry Risotto
Curry has such great flavors and aromas that we just got a craving for something curried. So, since we haven't done a risotto in quite awhile and we had some organic chicken breasts, we opted for a chicken curry risotto.
We like grilling, but didn't want to turn on the grill for one chicken breast so we whipped out the panini grill. (You could also use a Foreman grill). We got some nice grill marks on it and cooked it in half the time, about 7-8 minutes. It was quite flavorful and had lots wonderful texture! We've made quite a few variations of risotto and they are all wonderful; but this one is special if you like the smell and taste of curry.

When serving, garnish with Italian parsley sprigs and serve with Major Gray's Chutney for additional sweetness if desired. Another delicious and beautiful risotto dish added to our collection.
