DIY Lemon Meringue Pie

Our grandson, Simon, loves to cook. And, being a kid, you'll never guess what his favorite things to cook are...desserts of course! Since we were having a lemon garlic chicken cooked on the grill, he thought it would be great to follow through with the lemon flavor. After deciding on the flavor I asked him what he wanted to cook. Lemon meringue pie popped into his mind. My lemon meringue pie recipe that I usually make was at home so we adapted a recipe from food.com.

We bought a pie crust to make it easier to prepare; but maybe next time we'll make the crust too. It turned out very good and was delicious! We were both happy with the results and the family was proud of Simon! So here's Simon's take on the recipe...

Servings:                 8 pieces
Prep Time:            30 mins
Cook Time:           20 mins
INGREDIENTS:
For the filling:
1 prepared graham cracker pie crust
1 cup sugar (I used a bit less, about 7/8 of a cup)
2 tablespoons all purpose flour
3 tablespoons cornstarch
1/4 teaspoon salt
1 1/2 cups water
3 lemons juiced and zested (these were home grown)
4 egg yolks, beaten
For the meringue:
4 egg whites
1/4 cup white sugar
1/4 teaspoon cream of tartar

PREPARATION:
Preheat oven to 350* F
For the filling:
1. In a medium saucepan, whisk together sugar, flour, cornstarch, and salt. Stir in water, lemon juice and lemon zest.
2. Cook over medium-high heat, stirring often, until the mixture comes to a boil. Place egg yolks in  a small bowl and whisk. Add the egg yolks to the sugar mixture. Bring to a boil, stirring constantly until thick. Remove from heat.
3. Pour filling into the prepared pie crust.
For the meringue:
1. Using an electric mixer, whip the egg whites until foamy. 
2. Add the sugar and cream of tartar gradually and continue to whip until stiff peaks form. Do not overmix!!! Spread meringue over the pie, sealing the edges at the crust.
3. Bake in preheated oven for 8-10 minutes or until meringue is golden brown. Keep an eye on it so it doesn't burn.
