DIY Mediterranean Chicken Roulade

As we were leafing through a food magazine the other day we saw a recipe for a chicken roulade. We haven't made roulades in a long time and thought it'd be fun to create a recipe. Since we love Mediterranean flavors, we opted to use ingredients from that region; feta cheese, sun dried tomatoes and kalamata olives. It went together well and was really delicious. Serve it with your favorite side dish and you're good to go. 

SERVES:         2
PREP TIME:    30 minutes
COOK TIME:   40 minutes

INGREDIENTS:
1 large organic chicken breast pounded to 1/4" thickness
1/2 cup Kalamata olives, quartered
1/2 cup sun dried tomatoes in 1/4" pieces
1/2 cup crumbled Feta
1 tablespoon Northern Italian seasoning
Fig balsamic vinegar splashed on top

PREPARATION:
1. Place chicken breast between 2 sheets of waxed paper or plastic and pound evenly until it's about 1/4" thick.
2. Cut up the olives and sun dried tomatoes and place in a medium sized bowl.
3. Add the Feta and Italian seasoning and toss to mix completely together.
4. Place the mixture on the pounded chicken breast then roll it up and tie in several places with kitchen string. Splash with fig balsamic.
5. Place in an ovenproof pan and cook at 350*F for about 40 minutes or until done. Check temperature with a meat thermometer.
6. Remove from oven and brush with the drippings in the pan.Remove string, slice about 3/4 inch thick and serve.

DIY Mediterranean Chicken Roulade

PLATING:
Arrange the slices on a warmed plate and serve with your favorite side dish.
