  Old Fashioned Hot German Potato Salad
We haven't had hot German potato salad in many moons. As we were making this recipe we remembered why. It's absolutely delicious and filled with rich bacon; which as a rule, we try to minimize. Even though the taste of rich, delicious bacon is wonderful we tend to cook meals with olive or nut oils. So, needless to say, this was a treat for us as we love bacon. We cooked up the bacon and had a great time eating it! We paired it with rare sashimi grade Ahi tuna which was a super dining experience that we both enjoyed!

SERVES:           4

PREP TIME:    30 minutes
COOK TIME:   20 minutes

INGREDIENTS:

12-14 small to medium sized potatoes (we had a bag of assorted colored potatoes which we used)
1 bunch of green onions, sliced in 1/4" slices
1/4 cup flour
1/2 cup sugar
12 ounces bacon, cut into small pieces
1/2 cup white vinegar
1.5 tablespoons celery seed

PREPARATION:

1. Cook the potatoes with skins covered with water until fork tender (about 10 minutes.) Remove from water and cool. When cooled cut up the potatoes into bite sized pieces.
2. Meanwhile, cook the bacon. Remove from pan and set aside. Remove some of the bacon fat but leave enough to mix the remaining ingredients together.
3. Mix the green onions, flour and sugar together.
4. Add the vinegar to the bacon grease then add the potatoes and all of the remaining ingredients. Gently toss to thoroughly mix.

PLATING: This dish should be served warm. If you make it ahead of time, warm in an oven before serving.
