DIY Sauteed Pork Chops with Organic Cherry Sauce

Pork Chop with Cherry Sauce
Pork chops are a favorite with us and we've made them every which way...so here's another idea if you're in the mood for making pork chops with a delicious sauce.

We bought frozen organic cherries as it isn't cherry season yet. They were almost as good as fresh cherries. You can see how nice and plump they are. We paired this dish with baked yams, which we also love. The dinner was awesome, almost like eating dessert for dinner.

SERVES:            2
PREP TIME:     15 minutes
COOK TIME:     about 30-35 minutes

INGREDIENTS:
2 pork chops about 1" thick
Granulated garlic
Fresh ground black pepper
Olive oil to coat pan
For the sauce:
1 large shallot, diced
1 teaspoon thyme
1 cup red wine
1 tablespoon balsamic vinegar
1.5 tablespoons brown sugar
1.5 teaspoons corn starch mixed with juice from the cherries
6 ounces frozen dark sweet cherries, pitted

PREPARATION:
1. Sprinkle the pork chops with granulated garlic and pepper. Heat saute pan medium hot and saute the pork chops until browned on both sides and inside temperature reaches 145*F. This takes about 8-10 minutes per side. Reserve in a warm 200*F oven.
2. In the same pan, saute the shallot, add the thyme. When the shallot is a light brown, add the wine, vinegar, and sugar. 
3. Mix the corn starch in about 2 tablespoons of the juice from the cherries. Add that mixture and the cherries. Cook until thickened and heated thoroughly. 

PLATING:
Place the pork chop on the plate and spoon the delicious cherry sauce over it. Serve with your favorite side dish.
