Goat Brie Stuffed Figs with Capers on Fig Jam for Tapas


We are having a love affair with fresh figs this summer.  After a long absence, they have reentered our lives and have taken over completely. While we bask in the sunshine of their sweet essence, we fear for their leaving this fall.

In any event, figs make good tapas, and tapas is what we are about this month. So here is a combination of fresh figs and goat brie with a caper and floated on a spread of fig preserves. This is delicious if you crave something sweet.

Serves:          2 people who can control themselves...LOL
Prep Time:    10 minutes or so
No Cooking:

INGREDIENTS:
5 small fresh figs - We used Mission but Calmyrna would be delicious too. Any ripe fresh fig will do.
1/8 cup of goat brie or any soft Spanish cheese
5 capers or caperberries if you have larger figs
1/4 cup of fig jam - We used Fiordifrutta organic fig spread; but any good fig jam or even Spanish Lavender Honey will do.

PREPARATION:
1. Wash the figs and dry. Then cut off the stems.
2. Stand the figs on their broad base and carefully slice down into quarters leaving 1/8 inch or so connecting the quarters at the bottom.
3. Spread the fig quarters and insert a gob of the soft cheese on the inside. Top each with a caper or caperberry.
4. Spread some fig jam on the plate, warm enough to make it flow a little and set the figs on it to serve.
5. Serve with some of our Toasted Almonds which are incredible when dipped in the fig preserves.

SERVE:
These are delicious as tapas or even served as dessert. They  will accompany a sweet white wine, tea or coffee. Enjoy them before the fig season ends.
