Spicy Curry Flavored Deviled Eggs
We are really glad that eggs have become accepted as an important part of one's diet again. The pasture raised hens that are allowed to feed naturally deliver eggs that are beautifully colored and delicious in flavor. I seriously doubt that the eggs were ever the problem, just the way they were produced.

In any event, the first deviled eggs were so delicious we couldn't resist changing the taste up a bit and creating the curried and spicy deviled eggs. We added a bit more mustard, red pepper flakes and some curry powder. What a great combination of flavors! Now we have to think of more ideas for the next batch.

Spicy Curry Flavored Deviled Eggs

Makes:                12 halves
Prep Time:          20 minutes (approx)
Cooking Time:    20 minutes (approx)

INGREDIENTS:
1/4 pound pancetta, cut in 1/4" strips
4 ounces Parmesan cheese, grated
6 fresh chives chopped very small
6 hard boiled eggs (we like pasture raised, organic eggs where the chickens eat bugs and seeds in addition to natural feed)
2 T mayo
1 1/2 t Dijon mustard
1/2 t dried curry powder
Pinch of red pepper flakes
Fresh ground black pepper
Pinch of salt
Chives for garnish

Spicy Curry Flavored Deviled Eggs

PREPARATION:
While you are hard boiling the eggs, cut the pancetta and place in a pre-heated non-stick pan and cook until crispy. Remove, pat dry and set aside. These will be cut into strips for decoration as seen in the photo.
In the same non-stick pan, remove excess fat then place the grated Parmesan cheese in about 2" circles. Cook until they have slightly darkened to a golden brown. Remove from heat and let them cool in the pan. They will continue to darken a bit after you remove them from the heat. They'll be easy to remove when they're cool.
When the eggs are done (after 12 minutes) immerse them in ice water to stop the cooking process. When cool, gently remove the shells and cut the eggs in half. Remove yolks to a small bowl and mash the yolks with a fork. Add mayo, mustard, chopped pancetta and seasonings and mix to combine.
Scoop out about a teaspoon of the egg mixture and place in the egg white hole. Add a piece of pancetta and stand the cheese up into the egg mixture. Garnish with some thin pieces of chives.

You can serve these however you think is attractive. They make an impressive display on their own or a bunch of them grouped together.They are great for snacks, parties, breakfast, lunch or even hors d'ouevres. delicious, nutritious and delightful.
