We're having terrible cravings these days for fresh figs. We're really into creating some tasty recipes using them while they are in season. Figs are considered a fruit but they are actually a flower that has inverted itself into a fruit. The seeds are the real fruit.

Figs are the only fruit to ripen and semi dry on the tree. Luckily for us, California figs grow from mid May to mid December. So, you'll be seeing lots of fig recipes from us for the next few months. They are so sweet and delicious and combine really well with chicken or pork. We get both Mission and Calmyrna figs where we live. The Calmyrnas are green with reddish insides and the Mission are shades of brown with orange-brown insides. We prefer the Calmyrna slightly because they are sweeter; but the Missions have a more complex, musty flavor and we like them too..

We just happened to have some proscuitto in the freezer that needed to be used so we combined that with the figs and put together a great, simple sauce. It was awesome! This recipe is quick and easy!



Serves:                   2
Prep Time:            10 minutes
Cook Time:           10 minutes

INGREDIENTS:
8 ounces Tagliatelle or pasta of your choice
1/4 C EVOO 
8 figs, cut in half - we used Mission here.
1-2 T balsamic vinegar
Fresh ground black pepper
Pinch of salt
Pinch of red pepper flakes
4 ounces proscuitto, cut into bite sized pieces
Garnish with Italian parsley

PREPARATION:

1. Cook pasta according to directions on the package
2. Cut the proscuitto and figs
3. Pour enough EVOO into the pan to cover the bottom and heat the oil. When oil is hot, add the figs face side down. Cover and cook 3 minutes. 
4. Flip figs over and add the proscuitto and remaining ingredients and cook an additional 3 minutes.
5. Drain pasta when ready

SERVINGS:  
Serve the pasta onto warmed dinner plates then add the browned fresh fig and prosciutto sauce on top. Garnish with Italian parsley, slivers of green onion or chives. Parmesan can accompany this dish; but does not seem to add anything to it.
