DIY Rotisserie Grilled Duck

We have finally found the secret to making the perfect duck. First off, we basically used the same marinade that was so successful with the rotisserie chicken; but we substituted orange for lemon. The combination of ingredients is perfect for holding the moisture in the meat and creating a fabulous flavor. What a combo, huh!

We kept basting the duck while it was cooking so the skin got really brown and didn't crack. It turned out moist, tender and had evenly browned, crispy skin. It was so good! We can't wait to cook it again. Well, here's how we did it...

SERVES:                4 
PREP TIME:           15 minutes
COOK TIME:          1 hour

INGREDIENTS:
1 whole duck
1/2 cup fresh squeezed orange juice
zest from 1 large orange
1/2 cup olive oil
1 teaspoon salt
1 teaspoon oregano
1 teaspoon fresh ground black pepper
4 large garlic cloves, sliced thin

PREPARATION:
1. Zest the orange and then juice it.
2. Cut the garlic
3. Mix all marinading ingredients in a medium sized bowl. Mix thoroughly.
4. Place duck in a 2 gallon plastic bag and pour the marinade over the duck. Seal the bag and place in a casserole dish and put in the refrigerator. Marinate overnight.
5.Next day turn on the rotisserie, place the duck on the rod and secure the legs and wings. Put rod on the rotisserie and cook for about an hour. Be sure to baste every 10-15 minutes to keep it moist and flavorful.

PLATING:
Cut the duck into pieces, slice the breast meat and serve with your favorite side dish.
