DIY Slow Cooked Short Ribs
Having a new slow cooker has inspired us to come up with some new recipes. It is an All Clad 4 Quart with the aluminum insert for browning the meat and veggies on the cooktop first. One of our favorite meals is short ribs. We've cooked them many times in our Le Creuset pots and they are always super yummy! So this is our chance to slow cook them.
These ribs really have a fabulous flavor! The recipe makes plenty of delicious very tomatoey sauce so you will have extra sauce for the veggies and perhaps enough left over for a Bolognese over pasta and meat balls. Hope you'll give this a try.
SERVES: 4
PREP TIME: 10 minutes
COOK TIME: 8 hours plus 10 minutes for browning the ribs
INGREDIENTS:
3 pounds of bone in(for the added flavor) short ribs
1 cup water
1 cup ketchup
1 six ounce can of tomato paste
1/2 cup red wine vinegar
3/4 cup brown sugar
2 tablespoons Dijon mustard
1 teaspoon salt
1 bunch baby carrots
16 new potatoes
6 Maui onions
PREPARATION:
1. Brown meat on all sides
2. Mix all the sauce ingredients together and add to the meat. Add the potatoes and onions and cook on low heat for 8 hours.
3. If you can wait 3 to 4 hours to add the carrots. They take 4-5 hours to cook, depending on how soft you like them; but they will still be good if you cook them 8 hours.
PLATING:
Place two-three ribs on a warmed plate, add the veggies on the side around the meat then add a bit of sauce. Enjoy!
