DIY Apple Tartlet


Tom's favorite dessert, by far, is apple pie. So I'm always experimenting with different ways to get the apple pie taste in various forms. I've made muffins, hand pies, cobblers, crisps, even apple cakes. Here's a new idea. I bought some crescent rolls and made an apple filling with lots of spices and honey as a sweetener. I cooked the apples and stretched out the crescent rolls to form two triangles. They turned out really tasty and Tom is a happy camper! Yay! Next time I'll make my own pie crust and divide it into more even triangles so they look similar. Using the crescent rolls creates two different shapes. All tasty! Using the prepared dough does cut down on the time involved so this is quick and easy.

MAKES:               16 tartlets
PREP TIME:         40 minutes
COOK TIME:        30 minutes

INGREDIENTS:
2 apples (your choice)
3 tablespoons fresh squeezed lemon juice
1 1/2 teaspoons cinnamon
3 tablespoons honey
1/4 teaspoon allspice
1/8 teaspoon cloves
1 package crescent rolls
Cinnamon/sugar mixture to sprinkle on top

PREPARATION:
1. Preheat oven to 375* F.
2. Line cookie sheet with parchment paper.
3. Cut apples into small cubes and put directly into a small cooking pot. Toss with the lemon juice. Add the honey and spices and toss to cover all pieces of the apple. Cook apples over medium heat for 8 minutes, remove from heat, cover for another 5 minutes. This will create juice.
4. Open the crescent rolls, remove one triangle at a time and stretch out the dough. Cut to form two triangles (one will be a bit longer than the other). Fill each triangle with the apple mixture then fold over the dough and squeeze to seal. I brushed the dough with the juice created by cooking the apples. It does make the tartlet a bit sticky but I think it adds flavor. Sprinkle with the cinnamon/sugar mixture and place on a baking sheet lined with parchment paper. Repeat this procedure to make 16 tartlets.
5. Place in oven and bake 12-15 minutes. They are done when they are a toasty tan color.

PLATING:
Just pop them in your mouth and enjoy!
